1 sheet frozen Puff Pastry, thawed
1 C Blueberries
1 C Blackberries
1 C quartered Strawberries
1/4 C Sugar
2 T Cornstarch
1 Lemon, juiced
3 T jam, flavor of choice
1/2 C Greek Yogurt, flavor of choice
2/3 C Granola
Preheat the oven to 425. Roll out puff pastry as much as you can, to make it thinner. Lay the puff pastry in an oven proof skillet, pressing it down. Excess may hang over the edge. Spread jam on bottom.
In a bowl, combine the berries, sugar, cornstarch, and lemon juice, stirring until well combined and the sugar is mostly dissolved. Pour into crust.
Cover crust with foil and bake 15 minutes, then remove foil and bake an additional 15-20 minutes, until crust is golden brown and berries are bubbling.
Let cool for 10-15 minutes, then serve with yogurt and granola.
