This is just a fantastic recipe. I had a hard time not eating it all!
Roasted zucchini is the best!
I love onions and have been known to make caramelized onions just to eat by itself. These are absolutely amazing! This is my new go-to since it’s much easier than caramelizing them.
Easy and better than store!
This soup is bomb. No fruit, no coconut milk, just chickpeas, lentils, potatoes, and spices.
Excellent recipe, and the only rice I have made in my Instant Pot (other than recipes that included rice in them). I have made this repeatedly, and always when I make the Kheema Matar.
Makes a great side!

I used to *hate* brussels sprouts. Then Jenna told me to buy them fresh and roast them in the oven in bacon grease. Instead, I used coconut oil, and it became a favorite. These are Zoe’s second favorite vegetable, after green peppers of course. Pro tip: never, never, never eat frozen brussels. They must be fresh.
