1 lb Ground Chicken
1/2 C Bread Crumbs
1/2 C Parmesan
Garlic to taste (I used 2 heaping spoons of jarlic, divided)
1 Egg
Salt & Pepper to taste
Olive Oil
1 28 ounce can Crushed Tomatoes
Italian Seasonings to taste
2 C Shredded Mozzarella
Mix chicken, crumbs, parmesan, half the garlic, egg, and salt and pepper. Shape into approximately 12 balls. Heat oil in skillet and brown meatballs on each side. Remove meatballs, add tomatoes, Italian seasonings, and rest of garlic. Mix. Add meatballs back in and cover. Cook until internal temperature reads 165 degrees. Top with mozzarella and cover. Cook until cheese is melted and serve.
