Chicken
2 lbs. Chicken Breast, cut into 1 1/2 inch pieces
1/2 C Greek Yogurt
2 T Curry Paste (I used red)
1 T Oil
Salt & Pepper to taste
Sauce
1/2 C Greek Yogurt
Juice of one Lime (about 2 T)
1 t. Curry Paste (I used red)
Salt & Pepper to taste
Mix chicken ingredients and marinate for at least one hour. Skewer and bake at 425 for 15-20 minutes. Mix sauce ingredients and serve with skewers.
Optionally serve with roasted baby potatoes and broccoli.
