12 oz. Medium Shrimp, de-veined and tail removed
2 Cajun style Chicken Sausage links
5 C. Riced Cauliflower or 2 packages frozen Riced Cauliflower w/Italian Cheese
2 cans Fire Roasted Diced Tomatoes
2-5 Garlic Cloves, minced
12 oz Frozen Mixed Vegetables
2 t. Cajun Seasoning
Cayenne Pepper to taste
Salt to taste
1 T Oil
Heat oil in dutch oven. Add cauliflower and break apart if frozen. Add all other ingredients, except for shrimp. Cook until cauliflower is softened and veggies are thawed. Add shrimp and cook through.
