3 cups flour
2½ cups sugar (I use less)
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
½ tsp. ginger
3 large eggs, beaten
1 cup salad oil (I use it all)
2 tsp. vanilla
3 cups unpeeled zucchini, grated
1 cup sweetened, flaked coconut
½ cup chopped walnuts (optional)
Sift dry ingredients together and put in bowl. By hand, mix in the other
ingredients in usual manner. No need to haul out the electric mixer!
Generously grease 2 loaf pans.
Bake at 350°F. for 1 hour or until done.
This is really good! Best when cooled completely!
