1 T. Olive Oil
1 t. Butter
Salt & Pepper to taste
2 t. Lemon Juice
1 T. Flour
1 t. Chopped Fresh Parsley
1 (4 oz) Tilapia fillet (thawed)
Heat oil in skillet over medium heat. Lightly season fish with salt and pepper to taste. Cover with flour. Cook in skillet 2-3 minutes each side til golden brown. Remove from pan. Add butter and lemon juice to pan. Whisk until butter is melted. Pour over fish and sprinkle with parsley. Serve.
