Svend’s Cornbread

1 C. flour
2/3 C. white cornmeal
1 ½ T. sugar
1 T. baking powder
1 t. salt
1 egg
2/3 C. milk
1/3 C. extra virgin olive oil (don’t use a different oil!)

Preheat oven to 425.

Wet the inside of an 8X8 baking pan with olive oil. Do not subtract this from the oil intended for the bread.
In a medium bowl, mix flour, cornmeal, sugar, baking powder and salt.
In a small bowl, beat together the egg, milk and olive oil.
Pour this mixture into the flour mixture all at once.
Stir, until the combined mixtures are thoroughly saturated with the liquid and a resistance is felt when stirring.

Bake 25 minutes or until golden brown. May be doubled exactly.

This is ye olden recipe for Cornbread as concocted by trolls in the mountains of Norway for the purpose of seducing Vikings to marry their daughters. Some did. That is how the Berserks were created.

But, be ye all careful who bakes this bread. A powerful secret hides within its seducing qualities: If a woman serves it to a man, he will fall helplessly in love with her!
