Stuffed Green Peppers

4 Large Green Peppers
1 lb. Hamburger
1/2 Medium Onion, chopped
1 C. Cooked Rice
Tomato Juice
1 Can Diced Tomatoes w/Basil
Salt
Pepper
Cracker Crumbs
Butter
Sharp Shredded Cheese

Take tops off of green peppers and clean out; save tops. Place in boiling salt water for 5 minutes and then drain. Set aside in buttered casserole dish until cool to touch.

Thoroughly mix hamburger, onion, rice, tomato juice (so as not too soupy), diced tomatoes, salt and pepper. Fill each green pepper with hamburger mix, putting leftover meat in dish around peppers. Top peppers with crumbs, dot with butter. Sprinkle peppers and leftover meat mixture with cheese and place tops (sans stem) on meat mixture.

Baked 15 minutes at 350 degrees; cook an addition 10-25 minutes at 400 degrees, or until done.
