Roast Chicken

1 Whole Chicken
1 Celery stalk, cut into 4-5 pieces, leaves removed
4-5 T Butter
Salt & Pepper
Other Seasonings, to taste

Preheat oven to 350 degrees.

Place chicken in roasting pan, place celery and 3 T butter in cavity. Place remaining butter, cut into small cubes, on chicken. Alternatively, if using softened butter, rub butter all over chicken. Sprinkle chicken with salt, pepper, and other seasonings.

Roast for 1 hour 15 minutes, or until thermometer reads 165 degrees. Remove roasting pan, cover with foil, and let rest at least 15 minutes before carving.

Note: This is a very juicy chicken. You may want to remove the celery and drain the juices before carving to lessen splatter.
