*Slow cooker required
3 lb of Beef (whatever cut is on sale for me)
1 bag of baby carrots
1 white or yellow onion, cut into eighths
3-4 Potatoes, cut into similar sizes to the onion
Beef Broth
Full bulb of Garlic
Salt/Pepper

  1. Season the beef with salt and pepper on all sides and set it in the bottom of the slow cooker.
  2. Line all sides around the beef with a layer of potatoes.
  3. Next layer is Garlic and Onions interspersed.
  4. Then a layer of carrots.
  5. Pour the beef broth over everything until there’s 1-2 inches left in the top of the slow cooker.
  6. Stuff more potatoes, onions, and garlic up to the top.
  7. Top with a layer of carrots even if it’s touching the lid, it’ll cook down.
  8. Cook on high until the beef is 145 degrees (3-5 hours I think, start checking temp every 30-45 mins once it starts smelling good).
