Quinoa and Black Bean Salad

Power packed with lean protein and a delicious low calorie side.   Great cold or warm.

3/4 cup of quinoa
1 1/2 cups vegetable stock
2 Tbsp. olive oil
2 (15oz) cans black beans (drained and rinsed)
1 onion (chopped)
3 cloves of garlic (chopped)
1 cup frozen corn
1 tsp. of cumin
1/4 tsp. to 1/2 tsp. Cayenne Pepper
Salt and Pepper to taste
1 can of Rotelles (or the like, drained)
1/2 cup fresh cilantro (garnish or chopped)

Directions

Heat oil in a medium saucepan.  Add onions and garlic and sauté until onions are soft (about 4 to 5 minutes)

Add quinoa and cover with the vegetable stock. Add Cumin, Cayenne Pepper, Salt and Pepper.  Bring to a boil.

Cover and reduce to a simmer for about 20 minutes.

Add frozen corn and continue to simmer until corn is warmed through (about 5 minutes).

Remove from heat.

Add drained black beans, drained rotelles.

Garnish or mix in cilantro.
