Quiche Lorraine

1 unbaked 9” pie crust
6 oz. crumbled fried bacon
2 C. shredded Cheddar and/or Swiss cheese
5 eggs
1 ½ C. half and half
1/8 t. salt
Dash cayenne
Dash nutmeg
2/3 C. minced onion

Preheat oven to 425. Press pastry evenly to the sides and bottom of the pan.

Mix all the other ingredients in a bowl and pour into the shell.

Bake 15 minutes; turn down the heat to 350 and bake an additional 35 minutes. Let set about 10 minutes before serving.
