Pineapple Cake

2 C. All Purpose Flour
1 1/2 C. Granulated Sugar
2 t. Baking Soda
1 C. Desiccated Coconut (optional)
2 Eggs, slightly beaten
1 t. Vanilla Extract
1 20 oz can Crushed Pineapple

3 C. Powdered Sugar
1 t. Vanilla Extract
1/4 C. Non-Fat Milk

Preheat oven to 350 degrees. Coat a 9×13 pan with nonstick spray. Combine flour, sugar, baking soda and coconut. Add eggs and vanilla, and stir in crushed pineapple. Pour into cake pan and bake 30-40 minutes, until a toothpick comes out clean.

For the frosting, mix powdered sugar, vanilla and milk in a large bowl for consistency. May substitute coconut extract for vanilla.
