Grandma Hornickel
1 cup oil (1/2 cup oil + 1/2 cup applesauce for lighter version)
3 eggs, beaten
2 cups sugar (or less)
2 cups pureed green tomatoes (okay to puree seeds and peeling)
3 cups flour (can use 1 cup wheat flour and 2 cups white flour)
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon ground cloves
1/2 teaspoon baking powder
2 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
Stir together oil, eggs, sugar and tomatoes and set aside. Sift together flour, soda, salt, cloves, baking powder, cinnamon and nutmeg and blend with tomato mixture. Pour into 2 well-greased loaf pans. Bake at 325* for 1 hour.
Variation: Use 1-1/2 cups green tomato + 1/2 cup grated apple or crushed pineapple. Nuts or raisins can be added.
