Gingerbread

1 egg
1 C. molasses
¼ C. oil
½ t. salt
2 t. baking powder
1 t. ginger
2 C. flour
½ t. baking soda
½ C. strong coffee
1 t. vanilla

Preheat oven to 375 and grease an 8X8 pan.

Beat the egg lightly. Add molasses and oil. Mix and sift salt, baking powder, ginger, flour and baking soda together. Add alternately with the coffee and vanilla.

Bake for 35 minutes. Top with Lemon Sauce.
