Coconut Oil
Coconut Milk
Chicken Broth
Chicken or Shrimp
Sugar Snap Peas
Baby Bella Mushrooms
Minced Garlic
Red or Green Curry Paste
Rice

Saute garlic in oil. Add mushrooms and cook until soft. Add milk and broth, bring to a boil. Add meat and curry paste. Simmer until meat is mostly cooked through. Add peas and cook until meat is fully cooked through.

Serve over rice.
