3 T Butter
1 Onion, chopped
3 Bulbs of garlic (yes, bulbs – around 30 – 40 cloves), skin off of cloves but left whole
3 Celery stalks, chopped
1 lb Chicken, cut into 1 inch pieces
Salt
Pepper
1 C. Orzo
2 C. Chicken or Vegetable Broth
Turn IP to Saute and melt butter. Add onion and saute for a while. Add Garlic cloves and saute for a while longer. (real exact science here) Add chicken; sprinkle with salt and pepper. Add celery and saute until chicken is mostly dead. I mean cooked through. Add orzo and broth; stir.
Cook on high pressure for 3 minutes and then quick release.
