Cornish Hen(s)
1/4 Onion per hen
Salt
Pepper
Basil
Oregano
Rosemary
Savory
Thyme
Butter
Place 1/4 onion into hen’s empty cavity. Melt butter in casserole dish. Place hens in casserole dish and baste with melted butter. Mix all spices in small bowl and mix. Rub spice mixture over hen and place leftover inside with onion. Bake at 325 for 45 min to 1 hour, basting with melted butter every 15 minutes. Serve with Uncle Ben’s Wild Rice.
Cornish hens are individually wrapped and make a great meal when you’re home alone, or to cook for guests. They seem all fancy-like, but they turn a bit silly when you flap their little wings and make them “fly” at your children before they’ve been cooked. Also, people think you’re weird. Oh well.
