2 (26 oz) cans Family Size Cream of Chicken Soup
2 (8 oz) cans Chicken Broth (I think they are 8 ounce…they’re the smaller ones)
2 (14.5 oz) cans Diced Tomatoes and Green Chile’s (Rotel)
2 (14.5 oz) cans Black Beans
2 (14.5 oz) cans
1 cup Jalapenos – Diced (Canned Green Chile’s would work too)
1.5 lbs Chicken Breast – Thawed
Chile Powder
Ground Red Pepper
Garlic Powder
Paprika
Ground Cumin
Tortilla Chips – crushed (garnish)
Sour Cream – (garnish)
Cheddar Cheese – shredded (garnish)
Thaw the Chicken. Blacken top with Red Pepper and Chili Powder. Bake at 350 for 25 to 30 mins. Once cooked, dice chicken.
In a LARGE pot combine Cream of Chicken Soup, Chicken Broth, and diced green chilies. Strain and Wash Black Beans thoroughly, then add to pot. Drain Corn thoroughly then add to pot. Quick Drain (open can lid half way and drain some water out) Diced Tomatoes then add to pot (i like a little of the ‘tomato water’ added into the soup…so use your discretion). Add the Diced Chicken and Stir. Add Chile Powder, Red Pepper, Garlic Powder (a few pinches), Paprika (a few pinches), and Cumin (a few pinches) to taste. Cook on medium until warmed thoroughly, stirring occasionally (everything is ready to eat, so how warm you want it is up to you).
Scoop into bowls, garnish with shredded cheddar cheese, sour cream, and crushed tortilla chips.
Tips:
For seasoning ~~ So most have tried it at work, and a majority have liked the combination of spices. I usually coat the chicken in Red Pepper and Chili Powder pretty heavy when I bake it (I also add just a bit of salt, but not too much because the soup is salty enough, especially garnished with salted chips). For the soup, when I usually spread a thin layer of chili powder to cover the top, 1/2 that amount of red pepper and Paprika, then a ¼ amount of Cumin and Garlic Powder. Stir in and let that cook for a while, then repeat that process, minus the garlic powder. Remember, when using Cumin and Garlic…a little does go a long way. You will notice that the Cumin really is what it brings it all together, so I usually add that last after each seasoning round. Also remember the overall spiciness will be cut down with the use of sour cream and cheese (if used) so be like Emeril and kick it up a notch!
Portion Size ~~ This recipe yields a bunch, so it’s great for a football party or freezing for a rainy day! You can simply cut the portions in half though, and everything should be able to be thrown in one crock pot.
!!Warning!! After eating 3 or more bowls of this soup, it is recommended taking at least a 45 minute nap.
