Instant Pot Chicken Burrito Bowls

1 T. Oil
1 Onion, diced
4 cloves Garlic, diced or pressed
1 t. Chili Powder
Salt
1 1/2 lb Chicken Breasts or Thighs, cut into 1″ pieces
1 can Black Beans, rinsed
1 C. Rice, uncooked
1 cup Salsa
2 cups Chicken Broth
1/4 cup chopped cilantro (optional)
Shredded Cheddar cheese

Set IP to saute. Heat oil and onion; cook until soft. Add the garlic and cook an additional minute. Add chili powder and salt. Stir to combine. Add the chicken, black beans, salsa, and chicken broth. Stir. Sprinkle rice evenly over top, but do not stir. I get a burn warning when rice is stirred in.

Cook on high pressure for 10 minute, then quick release.

Serve with cilantro and cheese.
