Cheese and Onion Quiche

Single 9” pie shell
3 T. butter, divided
1 C. onion, chopped
1 T. flour
2 C. Swiss cheese, shredded
3 eggs
1 C. half and half
1 t. salt

Roll out the dough and fit it in a 9” pie plate. Spread 1 T. softened butter on the crust and chill well at least an hour before starting the rest of the recipe.

Preheat the oven to 425.

In a small skillet over medium heat, cook onions in 2 T. butter until they are tender; about 5 minutes. Spread evenly in the bottom of the shell.

Toss the flour and cheese together in a bowl and then sprinkle it over the onions. In the same bowl, beat the eggs with the cream and salt, with a whisk. Pour this mixture over the cheese and even out the combine mixtures.

Bake 10 minutes; turn the oven down to 350 and bake 30-35 minutes long or until the top is a rich brown.

Let the quiche stand for 10 minutes before cutting.
