Cauliflower Meatloaf

1 large head of Cauliflower 8″ in diameter or 2 small heads
4 strips bacon, diced into 1/4 pieces
1 lb. Ground Chuck
1/2 tsp. Salt
4 twists of Pepper Mill
2 T. dehydrated onion
1 C. Moist Bread Crumbs
3/4 C. Milk
4 Eggs, beaten until lemon yellow
Dash of Paprika

Wash the cauliflower well and break it into pieces. If there is a large core, cut into slices. Place in cold water and bring to a boil. When the larger stems can be pierced with a fork, remove from heat and drain. Set aside to cool.

Brown the diced bacon in frying pan, remove bacon and set aside. Then brown ground chuck in bacon drippings. Add salt, pepper and dehydrated onion.

Cover bottom of a greased loaf pan with pieces of cauliflower. Sprinkle with some of the bread crumbs. Follow with layer of ground meat. Repeat until all of the cauliflower, bread crumbs and meat are used up. Add milk to the eggs and mix very well. Pour this over the ingredients in the loaf tin. Sprinkle bacon over the top.

Bake at 300 degree Fahrenheit for 45 minutes or until the egg mixture has set like a custard. Invert on a hot platter and garnish with paprika.
