1 C. Quick-Cooking Oats
1 C. Buttermilk
1 Egg, beaten
1/2 C. Brown Sugar, packed
1/4 C. Vegetable Oil
1 C. Flour
1 t. Baking Powder
1/2 t. Baking Soda
1/2 t. Salt
Soak oats in buttermilk for 15 minutes, then stir in egg, sugar and oil. Combine the rest of the ingredients and stir into the mixture just until moist. Fill muffin cups 3/4 full and bake at 400 degrees for 16-18 minutes.
