1 Qt. Buttermilk
1 C. & 2 T. Vegetable Oil
2 C. Boiling Water
5 t. Baking Soda
4 Eggs
3 C. & 2 T. White Sugar
4 C. Kellogg’s All Bran Cereal
2 C. Nabisco 100% Bran Cereal
1 T. Salt
5 C. Flour
Pour boiling water over 100% Bran. In another bowl cream oil and sugar. Add beaten eggs, buttermilk and All Bran. Sift flour, soda and salt, and add to above. Fold into soaked bran. bake in greased muffin pans or with papers for 15 minutes at 400 degrees. Yield 5 Dozen.
Can store in refrigerator up to 6 weeks. Do not re-stir – just dip in gently for amount needed.
These were Troy’s favorite muffins at one point, and I have yet to find someone who does not like them.
