1 pkg. (8 oz.) elbow macaroni
¼ C. butter
¼ c. flour
2 C. (8 oz.) grated cheddar cheese
1 t. salt
1/8 t. pepper
2 C. milk
Preheat oven to 375.
Cook macaroni as the package directs and drain.
Melt the butter in a medium saucepan; remove from heat. Stir in the flour, salt and pepper until smooth. Gradually stir in the milk and bring to a boil, stirring constantly.
Reduce heat and simmer for 1 minute. Remove from heat. Stir in 1 ½ C. cheese and the macaroni.
Pour into a 1 ½ qt. casserole and sprinkle the remaining ½ C. cheese on top.
Bake 15-20 minutes or until the cheese is golden brown.
