Apple Fruit Fritters

5 Tart Apples
1 t. Cinnamon
1 T. Sugar
5 T. Cider or Apple Juice
1 C. Flour
1/2 t. Baking Powder
2 Eggs
1 C. Milk

Core and pare apples. Cut into circular 1/2″ thick slices. Blend cinnamon and sugar. Stir to paste with a little cider and add remaining cider. Place apples in flat bowl or dish. Pour cider over apples. Let stand 2 hours, basting several times with cider. Drain. Mix flour and baking powder together. Beat egg yolks and add milk. Stir in flour. Fold in stiffly beaten egg whites. Dip apples into batter and fry fritters in butter. Dust with powdered sugar and sprinkle with cinnamon or nutmeg. Serve hot. Serves 6-8.
