Zucchini Bread

3 C. Flour
2 C. Sugar
1 t. Baking Powder
1 t. Baking Soda
1 t. Salt
3 t. Ground Cinnamon
2 C. Pureed Zucchini (peeled)
1 C. Oil
3 Eggs

Preheat oven to 350. Mix dry ingredients thoroughly in a mixing bowl. Stir in zucchini, eggs and oil. Mix until smooth. Pour into 2 greased loaf pans and back for 40 – 50 minutes until a knife comes out clean.

For pureed zucchini, a blender works best.
