Pork Chile Verde

1 T Canola Oil
2 lb Boneless Pork loin in 1″ cubes
1 C. Chicken Broth
15 oz Salsa
1 med Onion, quartered
1 Green Bell Pepper, cut in large chunks
2 C. Potatoes
Salt, Pepper to taste

Season cubes with salt & pepper. Sear in oil and then place in baking pan.

Pour broth in skillet, scrape into pot. Add salsa, onion and bell pepper.

Cook 2 hours at 300 degrees. Add potatoes when 45 minutes remaining.
