Fudge

4 T. Baking Cocoa
2 1/2 C. Sugar
1/4 t. Salt
1 C. Cream or Canned Milk
2 T. Light Corn Syrup
1 T. Vanilla
2 1/2 T. Butter

Boil sugar, salt, milk, cocoa & corn syrup in big saucepan over low heat, constantly stirring for about 20 minutes, to softball stage.

Remove from heat and add butter and vanilla – do not mix – and let sit until completely cool. Beat the mixture no more than 5 minutes, pour into a pan and refrigerate.
