1 Tablespoon(s) Melted Butter
2 Eggs
3/4 Cup(s) Soy Milk (or 1/2 C. Cream with 1/4 C. Seltzer)
1 Teaspoon(s) Vanilla Extract
2 Packets Splenda or other sugar substitute
1/8 Teaspoon(s) Nutmeg
1/8 Teaspoon(s) Cinnamon
1/4 Teaspoon(s) Salt
1/2 Teaspoon(s) Baking Powder
1/2 Cup(s) Atkins Bake Mix
Heat up pancake griddle.
Mix together all dry ingredients: Bake mix, baking powder, salt, cinnamon, nutmeg and splenda.
Add Vanilla, soy milk, eggs and melted butter. Blend well.
Let mixture sit for 5 minutes.
Cook on hot griddle until golden brown, turning only once.
