2 inch piece of seaweed (kelp, ?)
50 Gram(s) Bonito flake
1 Cup(s) water
Soak 2″ piece of kelp in the water for 30 minutes before putting on heat.
Put on Medium-high heat until it just starts to bubble. Remove kelp. DO NOT OVERCOOK.
Allow water to start boiling, then remove from heat.
Add bonito flake. Stirring is not required.
When all bonito flake has settled to the bottom of the pot, filter the contents through cheesecloth into another container. (I actually use a flour sack towel instead).
Ready to use!
