Coconut Chicken

1/4 C. Butter
1 1/2 lbs Boneless Chicken Breasts or Tenders, cubed
1 pkg (10 ounces) Frozen Spinach
1/2 C. Coconut Milk
1 Large Clove Garlic, minced
Salt
Pepper
Slivered Toasted Almonds, optional

Heat garlic in a large skillet and add chicken; stir fry until chicken is white and cooked through. Cook spinach with coconut milk; add to chicken. Season with salt and pepper and garnish coconut chicken with nuts.
