Greek Potatoes

Juice of one Lemon
1/3 C Chicken or Veggie Broth
1/4 C Olive Oil
Salt
3 Large Gold Potatoes, cut into 1 inch strips

Mix first 4 ingredients in a gallon ziplock bag. Add potatoes and mix well. Let sit. Preheat oven to 425. Place potatoes and juice in a casserole dish. Cover with foil. Bake for 20 minutes. Stir potatoes, re-cover with foil. Bake another 15 minutes. Remove cover and bake until tender.
