Hummus

1 can Chickpeas, drained
1 t Baking Soda
1/4 – 1/3 C Tahini
2-3 Garlic cloves, minced
Olive Oil
Juice of 1 Lemon
Salt
Cumin, to taste

Boil chickpeas in water and baking soda until skins start to come off. About 30-40 minutes. Cool, and dispose of skins. Add chickpeas and garlic to food processor and process. Add remaining ingredients and process until smooth, scraping down sides as needed.
