Veggie Lasagna

6 Lasagna Noodles
1 Onion, chopped
2 Celery stalks, chopped
1 Bell Pepper, chopped
Spinach
2 Zucchini, sliced
1 Eggplant, sliced
Ricotta
4 C Mozzarella
Spaghetti Sauce

Boil noodles. Saute onion, celery, and bell pepper.

Spread a thin layer of sauce in a 13×9. Lay 3 noodles down. Spread half the ricotta. Add a layer of spinach. Spread the onion mixture. Sprinkle 2 cups mozzarella. Lay 3 noodles on top. Spread the other half the ricotta. Layer the zucchini and eggplant. Sprinkle the rest of the cheese on top.

Bake at 350 for 45 minutes to an hour.
