Chicken, Mushrooms, and Zucchini

1 lb Chicken, cut into bite sized pieces
8 oz Mushrooms, sliced
2 Zucchini, sliced
1 Onion, sliced or diced
5 cloves Garlic, minced
2 T. Olive Oil
1 t. Dried Rosemary
1 t. Dried Thyme
1/2 C. Chicken Broth
1/4 C. Balsamic Vinegar
1/4 C. Parmesan Cheese (optional, good without it)

Brown chicken with seasonings in 1 T. oil. Set aside. Saute veggies in 1 T. oil until soft. Add liquids. Add chicken back to the pan and simmer until liquid is reduced and chicken is cooked through.
