1 T Olive Oil
1 large Onion
Minced Garlic, to taste
3 T Tomato Paste
1 t Crushed Red Pepper
1 can diced Tomatoes
6 C Chicken Broth
8 oz Penne
1 large can Chunk Chicken
Salt and pepper to taste
Mozzarella
Cook onion in oil until soft. Add garlic and cook until fragrant. Add tomato paste, red pepper flakes, tomatoes, and broth. Season with salt and pepper. Bring to a boil. Add pasta and cook until al dente. Add chicken and parmesan cheese and heat through. Serve with a generous sprinkling of mozzarella.
