Dawn’s IP Broccoli Cheese Soup

3 T. Butter
1 Onion, chopped
3 Carrots, shredded
5 Garlic Cloves, chopped/pressed
1/4 C. Flour
2-3 C. Broccoli tops, finely chopped
3 t. Vegetable Better Than Bouillon
3 C. Water

Smoked Paprika to taste
Salt & Pepper to taste
2 C. Sharp Cheddar, shredded
1 C. Mixed Cheese (e.g., Fiesta blend, Colby/Jack, etc.), shredded
2 C. Heavy Whipping Cream

Set IP to Saute and melt butter. Add onions and carrots and cook until soft. Add garlic and cook for a few minutes longer. Add Better Than Bouillon and mix. Add flour and mix. Add water and broccoli and mix. Cook on high pressure for 6 minutes and then do a quick release.

Add spices and cheese. Stir until cheese is melted. Add cream and mix until well blended.

Serve with crusty bread.
