12 Eggs
1-2 Green Peppers
3-4 Roma Tomatoes
1 pkg Spinach
8 oz Mushrooms
1/2 Milk
8+ oz shredded cheese of choice
Salt & Pepper to Taste
Beat 12 eggs with salt and pepper. Add milk and beat until smooth. Set aside.
Saute mushrooms in oil until they begin to get soft. Add spinach and continue cooking until spinach is reduced. Spread spread spinach and mushrooms in buttered 9×13 casserole dish. Add chopped green pepper and tomato. Thoroughly sprinkle cheese over veggies. Pour egg mixture over cheese and bake uncovered at 350 for 45-55 minutes, or until egg is set.
